Smoky Chipotle Shredded Beef Tacos

Ingredients

  • 1 lb BornRaisedTX.com short beef ribs

  • 1 large onion, sliced

  • 3 garlic cloves, smashed

  • 1 tbsp smoked paprika

  • 1 tbsp cumin

  • ½ tbsp tomato bouillon

  • Corn or flour tortillas

  • Chopped onion, cilantro, and salsa of your choice (for serving)

Instructions

  1. Prep the Crockpot: Place the short ribs into your crockpot.

  2. Add Flavor: Top with sliced onion, smashed garlic cloves, smoked paprika, cumin, and tomato bouillon.

  3. Slow Cook: Cover and set to HIGH for 5 hours, turning ribs every 2 hours.

  4. Check for Tenderness: Cook until the meat easily falls off the bone.

  5. Shred: Remove ribs, shred the meat, and discard bones.

  6. Assemble Tacos: Warm tortillas and fill with shredded short rib meat. Top with chopped onion, fresh cilantro, and your favorite salsa.
